Each year, we organize an off premises meeting for our upper management to review the previous year and to develop and unveil the plans for the upcoming business year. This past January, we chose to have our all day meeting at the Meadowbrook Inn. We could not have been more satisfied with all aspects of the day. The accommodations were exactly to our specifications, and the relaxing atmosphere the Inn provided, made for a very enjoyable meeting. The staff was very professional and courteous and they tended to our every need , making sure that they were never interrupting our meeting. The dinner at the end of the night was magnificent from the ambience in the dining room to the gourmet selections we each enjoyed. It turned out to be one of our best meetings ever and the Meadowbrook Inn and the entire staff played a major role.

We saw (and heard about) Meadowbrook's evolution, but there was noting to prepare us for the first hand experience of being there. the building, the craftsmanship, the decor, the staff, the food, the ambience, and the inviting comfort were spectacular.
You are to be commended for your foresight and hard work in bringing Meadowbrook to fruition. It is clearly a landmark destination for the Pocono's and it reputation will simply continue to grow.

On our way home from the Pocono Builders’ Show, we decided to stop somewhere for dinner. But where? Route 209 was too congested; we just didn’t want to stop. We were almost to Tannersville before inspiration struck. Though there weren’t many cars in the parking lot, we decided to see if the Meadowbrook Inn was serving dinner.
It was, but not for another half an hour. So we sat at the elegant bar, and watched, the geese on the pond, while I sipped a glass of Merlot, and Seth had a Diet Coke. Soon all was ready, and we were seated in the main dining room. The Meadowbrook is a lovely place, with a dining room that is well appointed and comfortable. A fireplace, paintings, decorative lamps and even a pair of private alcove tables provide a feeling of romance.
Our waitress brought menus, and told us about the Chef’s specials for the evening. Though we were hungry, we took our time making our choices. An amuse bouche of smoked salmon mousse on puff pastry held our hunger at bay.
I started with a Wedding Salad, Field greens were topped with dried cranberries, thinly sliced almonds, and chunks of Gorgonzola cheese. A poppy seed dressing blended perfectly with those flavors.
Seth sampled the Crab cake appetizer. He received one fat and juicy crab cake, fried in a tempura-like coating, served with a delicious Remoulade sauce.
The breadbasket offered some special treats. Hot squares of whole-wheat bread competed with crisp crackers, and both butter and a mixed black and green olive Tapenade were provided as toppings.
Seth had chosen Boulliabase for his entrée. It was served in a large flat blow, a brilliant golden saffron-tinted broth containing mussels, little lobster tails, shrimp with their tails still on, and chunks of fish.
My dinner was equally attractive. The Roasted Duck with Fig Sauce was half a well-crisped duck. Dark dried figs were split in half, and topped in a sauce that had notes of orange and Port. The flavors blended beautifully. Crisp steamed vegetables completed the plate.
Though we really had eaten plenty, one dessert, the Cobbler ala Mode, sounded too good to resist. A mix of pears, plums, apples and apricots, it had a light crust and was accompanied by a scoop of creamy vanilla ice cream.
